Our names are Jennifer and Joseph and we are the bloggers of Jen, Jo, and Paleo! Most of the content will be written by me (Jennifer) with input provided by Joseph. Let us be clear that this blog is not going to be 100% paleo. It will focus on paleo recipes but may contain smattering of non-paleo recipes and off-tangent life-stories as well. We strive to eat clean on weekdays and indulge ourselves on the weekends. 80-20 is what Joseph likes to abide by in terms of the ratio of clean eating versus regular eating! I’m more of a… 60-40 gal myself… maybe even 50-50… okay, let’s face it, more like 40-60!
I am a High School English Teacher, and I graduated from the University of Texas at Austin with a Bachelor of Science in Advertising and a concentration in Business Foundations. I am in the process of pursuing my Masters of Education with an emphasis in Curriculum and Instruction at the Houston Baptist University. My hobbies include: reading, collecting leather-bound books, attempting to run with Joseph, ballroom dancing, singing about whatever I want whenever I want, and staying actively involved with my undergraduate sorority by serving as a member of the Board of Directors. My bucket list of goals include: completing a half-marathon (or two), earning a doctorate in… something, and competing in an amateur ballroom dancing competition!
Joseph is an Exercise Specialist, and he graduated from Texas Tech University with a Bachelor of Science in Exercise and Sport Sciences and a minor in Biology. He decided to further his education in fitness and took classes at the Life Time Academy to become a NASM Certified Personal Trainer with an emphasis in Corrective Exercise and Performance Enhancement. Aside from his full-time job, he also teaches an Insanity class at the Life Time Athletic CityCentre every Tuesday at 7:00PM! Check out his page here. His hobbies include: anything related to health and fitness, watching professional basketball, playing recreational basketball, and most recently – ballroom dancing with his girlfriend (me!). He has a bucket list of a series of fitness goals that include completing a half-marathon and then progressing to a marathon, completing an Iron Man triathlon, and completing the Spartan Race trifecta. Oh, and he’s a big sneakerhead.
